The "r" sounds indeed like the french "r", you pronounce it a bit dryer, though.

wikipedia, they don't have the "eu". I guess the way we would write it in french would be "yeurg"

If you have the Visions of Europe live CD then listen to the Holy Solos where Timo introduces the whole band. There you can hear how Jörg is pronounced.
